This salad is the creation of a French chef, M. Olivier, who in the 1860s opened a fashionable restaurant in
Moscow called The Hermitage.
Salad Olivier
Ingredients:
300 gr chicken breast, boned and skinned.
4 allpurpose potatoes, boiled in their skins and peeled.
2 cucumbers.
3 hardboiled eggs, peeled.
100 gr cooked fresh or frozen peas.
1 apple, peeled.
Spring onions
1 cup Mayonnaise.
Directions
Cut the cooked chicken and potatoes into 1sm cubes. Peel the cucumbers and also cut into 1sm cubes. Cut
finely spring onions. In a large bowl, combine the meat, potatoes, cucumbers, green peas, and onions. Add the
mayonnaise and mix gently, so those ingredients are not mashed.
Refrigerate the salad until serving time (but for no longer than 4 hours). Pilaf is classical Asian dish and to make it right is real art.
Pilaf
Ingredients:
500 g pork.
60 g oil
4 medium chopped onions.
12 big carrots.
34 garlic cloves.
2 cups rice.
4 cups water.
Salt.
Pilaf spices.
Directions:
1. Wash rice under running water and leave in the water for some time.
2. Slice meat in cubes and fry in oil.
3. Grate carrot and chopped onions
4. Add carrot and onions to meat and fry
5. Add spices, salt and rice (1 cup rice – 1 1/2 cup water)
6. Pour cold water, add pepper, laurel leaves and garlic.
7. Cover and cook on low heat for an hour
8. Take it off from the heat, cover warm and leave for 30 minutes
Directions:
Wash rice under running water
Add carrot and onions and fry with meat
Grate carrots
Chop the onions
Grated carrot and chopped onions
Add rice
Stir water
Add garlic
Fry meat
Ready dish – Bon appetite!!
Beef, Baked with Potatoes
Ingredients:
1 kg beef
1,5 kg potatoes
3 onions
Mayonnaise
200 gr cheese
Salt, pepper
Directions:
1. Cut meat, potatoes in strips
2. Chopped the onions
3. Grate cheese
4. Put beef on the baking pan sprinkle with oil
5. Put chopped onions, potatoes and salt
6. Spread with mayonnaise
7. Top with grated cheese
8. Preheat oven to 2000C
9. Bake in the oven about 1 hour
Fruit Salad
Ingredients:
1. 100 g dark grapes
2. 100 g strawberry
3. 2 oranges
4. 2 tab. spoons vanilla sugar
5. 2 tab. spoons orange juice
6. 2 tab. spoons peanuts
7. ¼ cup of whipped cream
Directions:
1. Wash grapes and strawberries and cut in halves.
2. Peel the orange, cut in 3 parts.
3. Brown peanuts on the dry pan( frying pan).
4. Mix orange juice, whip cream, add vanilla sugar.
5. Put fruits into bowl, mix, divide in portions, add peanuts and cover with whip cream.
“Spring Boom” Salad
Ingredients:
1. Kiwi
2. Banana
3. Grape
4. Chocolate (1 bar chocolate)
5. Whipped cream
Directions:
1. Cut fruits
2. Put in the bowl
3. Cover with whipped cream
4. Grave chocolate on top
Vitamin Mix
Ingredients:
1. 6 eggs
2. 100g mayonnaise
3. 100g green peas
4. One celery
5. Spring onions
6. Salt
Directions:
1. Boil eggs hard and peeled
2. Cut eggs in lobules and put in the big dish
3. Boil celery and carrot, peel and cut in stiks /cubes
4. Mix celery, carrot, onions, green peas, piccolies, add mayonnaise
5. Cover the eggs, decorate with parsley
“Mimosa” salad
Ingredients:
1. 5 hardboiled eggs, peeled
2. Long cheese
3. 12 onions
4. 1 cup mayonnaise
5. 1 can tuna
6. 100g butter
Directions:
1. Make 8 layers
a) 1st grated eggswhite
b) 2nd granted cheese
c) 3rd chopped pickled onions
d) 4th ½ cup mayonnaise
e) 5th chopped tuna
f) 6th grated butter
g) 7th ½ cup mayonnaise
h) 8th granted eggsyolk
2. Marinade for onionshot water (90 C), salt, sugar, pepper, lemon juice.
STUFFED GRAPE LEAVES (DOLMA)
Ingredients:
500 g beef
1 onion
50 g uncooked white rise
2530 grape leaves, rinsed and drained
Salt to taste
Ground black pepper to taste
Directions:
1. Chop the meat
2. Chop onion
3. Mix onion with ground beef
4. Add rinsed rise, salt, black pepper to taste
5. Add chopped dill and mix well
6. Place 2530 g of mixture in the centre of a leaf. Fold in the sides and then roll into a cigar shape
7. Place in prepared pot, close with the saucer
8. Pour in just enough hot water to reach the saucer
9. Cover and simmer over low heat for 30 minutes, until rise is totally cooked
10. Serve with the sourcream

Desert “The Bird’s Milk”
Ingredients:
1. 4 eggs
2. 2 glasses of sugar
3. Gelatin
4. Vanilla
5. 1 tsp. of cocoa
Directions:
1. Dissolve gelatin in warm water
2. Separate whites from yolks
3. Shake up whiteeggs with 2/3 parts of sugar
4. Divide the mixture in 2 parts
5. Add vanilla and gelatin into the first part and add cocoa to the second part
6. Make 3 layers – gelatin with vanilla, gelatin with cocoa and yolks shacked up with sugar.
7. Stir on glasses, layer by layer
8. Decorate with grated chocolate and fruits
