Read the text. Then do Exercises A and B.

There is a lot of historical evidence to show that people have been enjoying iced treats for thousands of years. 0) f  The physician Hippocrates recognised that iced treats were a ‘comfort food’. 1) ____  Even Alexander the Great is said to have enjoyed eating snow mixed with honey and fruit juice.

In ancient Rome, the Emperor Nero had ice brought to him from the mountains and mixed with fruit toppings. The Persians invented a special type of treat made with cold rose-flavoured water and mixed with thin vermicelli noodles to thicken it. The Mughal emperors of India mixed ice with sugar and fruit juice. But the first people known to have used technology to make iced treats were the Chinese. 2) ____

So how did ancient people who lived in warm places keep their snow and ice from melting? In ancient Mesopotamia, near the Euphrates River, archaeologists have found an early icehouse for keeping food cold. It is believed to be about 4000 years old. The Persians too are known to have developed a technique for storing ice. 3) ____  Special tall chimney-like structures with openings all around the top for air to go in were used to bring cold air into the fridges to keep them cold, at least for part of the year. High in the mountains of ancient Anatolia, people put snow in natural holes in rocks and covered them with tree branches to keep the snow from melting.

In 17th century Europe, Italy was the first country known to have made an ice cream with a milk mixture. The first known serving of this rare dessert was at a banquet in England in 1672, when it was served to King Charles II and his guests. The other people at the banquet became envious and also wanted to have ice cream. 4) ____  In the late 19th  century, immigrants from Italy brought their knowledge of making ice cream to other European countries and the United States. Ice cream became more popular, and improved techniques for making and storing iced desserts were developed, making it available to everyone.

At first, sellers only offered a taste of ice cream, called a penny lick, to customers.

5) ____  Once the glass had been emptied, it was simply wiped clean and then filled for the next customer. For health reasons, this system was banned in 1926. Fortunately, ice cream cones became popular and solved the problem of how to serve it.
